This recipe is our oldest daughter’s favorite cake! With cinnamon, nutmeg, pineapple, and pecans, it’s Kentucky Wonderful!
NOTE: This recipe is much more flavorful if using freshly grated cinnamon and nutmeg rather than the powered kind.
2 ½ cups, sifted, self-rising flour
2 cups granulated sugar
1 ½ cups vegetable oil
4 large eggs, separated
1 small can crushed pineapple, juice included
2 tablespoons hot water
2 ½ teaspoons cinnamon
1 ½ teaspoons nutmeg
1 cup chopped pecans or walnuts, floured (optional)
Beat 4 egg whites until stiff, set aside.
Combine flour, sugar, oil, egg yolks, pineapple, water, cinnamon, and nutmeg in a large mixing bowl. Beat well with a handheld mixer. Gently fold in egg whites and nuts.
Pour into an UNGREASED tube pan. Bake at 350ºF for 1 hour 15 minutes.
